Services and new technologies: banking, insurance, mutual insurance, brokerage, estate agency, accountancy, IT, software, apps, start-ups, websites.
The trade show's home page adds two categories in their own right: short supply chains, and institutional bodies and training. The mix is that of a regional trade show: in 2023, wholesalers and national equipment brands stood alongside local producers, installers from the region and chambers of commerce, trades and agriculture.

No list is attached to the 2027 edition. The website keeps online, outside the current menu, an exhibitor directory: it is the one for the 2025 edition, and it does not amount to a 2027 list.
The 2023 edition journal is the other document of this kind: it publishes the full list of exhibitors for that year. It includes distributors and wholesalers (France Boissons, Metro, Transgourmet Centre Ouest, Sysco), kitchen equipment brands (Rational, Hobart, Winterhalter, Unox, Meiko, Robot Coupe, Sammic), bakery equipment specialists (Bongard, Pavailler) and millers (Axiane, Bellot Minoterie, Grand Moulin de Ballan). Rational and Hobart, in particular, appeared in the journal's list at stand B9, which they shared with Groupe Benard, an equipment supplier based in La Ville-aux-Dames, near Tours, and a dozen other brands.
On the institutional side, the 2023 list brought together the CCI Touraine, the Chambre d'agriculture d'Indre-et-Loire, the CMA Centre-Val de Loire, the Région Centre-Val de Loire, the UMIH of Indre-et-Loire, Loir-et-Cher and Loiret, CPME 37 and training establishments, including the lycée Sadi Carnot - Jean Bertin.

The target catchment area is Centre-Val de Loire: the organiser puts the number of establishments in its catchment area at more than 16,000. In 2019, according to L'Hôtellerie Restauration, the trade show's reach had widened beyond Touraine and the Blésois, towards Angers and Le Mans.
Attendance figures are expressed in visiting establishments, a unit that cannot be compared directly with a count of individual visitors. No third-party audit or OJS certification is published.

Competitions
Professional competitions structure the trade show's activities. The 2027 programme is not yet published: the Competitions page still describes the 2025 edition, which announced eight. A competition for institutional-catering chefs; the "Jeunes espoirs du Centre Val de Loire 2025" trophy, organised for apprentices by the UMIH Centre Val de Loire, in association with the trade show, the Chambre des Métiers, the CCI and PAT MAT of the region; the "Trophée Estivin", open to chefs, sous-chefs and commis chefs, on the theme "Travail du Chou"; the "concours du meilleur Burger Régional" (best regional burger competition); the best viennoiseries competition, organised by the Maison des Artisans Boulangers-Pâtissiers d'Indre et Loire; the Easter pâté competition, run by the butchery and charcutiers-traiteurs federations; the Touraine rillons competition, run by the Confrérie des Rillettes et Rillons de Touraine; and finally the butcher's display competition, on the theme "La Touraine et sa gastronomie" (Touraine and its gastronomy), centred on shoulder of beef.
In 2023, the trade show journal announced eleven professional competitions, and the website's Competitions page detailed in particular "Le Rest'Hotel d'OR" for restaurant chefs and a national butcher's display competition organised in partnership with the Fédération de la Boucherie. The counter on the home page, which shows five competitions, therefore does not necessarily reflect the programme of a given edition.
Professional meetings
The trade show also serves as a meeting point for the département's professional organisations. The 2023 programme included the general meeting of the UMIH 37 and the official inauguration of the Chambre d'agriculture d'Indre-et-Loire's stand, in the Circuits courts (short supply chains) area. The thematic areas announced that year were producers, winegrowers, communication and start-ups, the hotel trade and French know-how, together with a "Prix des Innovations" area devoted to new products.
The hotel trade gained prominence with the change of name: according to L'Hôtellerie Restauration, it was in 2019 that the trade show opened an area entirely devoted to the hotel trade for the first time, with about ten exhibitors. The 2027 programme of conferences and round tables is not published.
Community & networks
Rest'Hôtel Tours is part of a network: Alliance Expo organises Rest'Hôtel et Métiers de Bouche trade shows in several cities, on a rotating calendar. For 2026-2027, the website announces Rouen (4-5 October 2026), Brest (7-8 February 2027), La Teste-de-Buch (8-9 March 2027), Tours, Caen (4-5 October 2027) and Tarbes (10-11 October 2027), then Dijon, Rennes, Périgueux and Clermont-Ferrand, announced for 2028 on the network page. Each trade show has its own catchment area and its own figures.
The trade show is relayed by regional bodies: in 2023 and 2025, the UMIH, the CCI, the chambers of trades and agriculture and the professional federations for butchery, charcuterie and bakery exhibited, organised or joined in competitions.

At national level, the sector's suppliers meet at major events such as Equip'Hôtel in Paris or Sirha in Lyon. Rest'Hôtel Tours plays a different card, that of proximity. Alliance Expo's managing director put it this way in 2019, quoted by L'Hôtellerie Restauration: "Professionals are waiting for human-scale trade shows".
On site: what you need to know
The trade show occupies Hall B of the Parc des Expositions de Tours, at the address given by the organiser: avenue Camille Chautemps, 37000 Tours. The park, operated by SPL Tours Événements, covers 19 hectares; Hall B covers 9,164 m² according to the operator.
By train, Tours is served by two TGV stations, Tours Centre and Saint-Pierre-des-Corps, about an hour from Paris-Montparnasse. From Tours station, shuttle 83 serves the Parc Expo and Vallée du Cher stops, and lines 3a, 3b and 4 stop at the Atlantes Duclos and Atlantes stops; line 16 links the park to Joué-lès-Tours and Saint-Pierre-des-Corps. By car, the park sits at the junction of the A10, A28 and A85 motorways, with a free car park of 5,000 spaces. The site is entirely on one level, with preferential access for people with disabilities, via the PMR lane.
Opening hours: from 9:30am to 7:00pm on Sunday 14 and Monday 15 March 2027. Entry is free on registration: as of 3 October 2026, the badge request page was not yet open ("Please come back later!"). For any questions, the organisers can be reached on 05 53 45 72 12.

Preparing your visit
For exhibitors
- Request the 2027 participation pack early via the website form: no 2027 pack is online. The 2025 pack is, and gives the order of magnitude: a semi-equipped stand priced at €85 to €155 per m² excluding VAT depending on size, plus a €280 registration fee.
- Look at the competitions: those of 2025 involved the professional federations, the UMIH and the region's chambers of commerce, trades and agriculture, and therefore their networks. A competition partnership, when the organiser offers one, can usefully complement a stand.
- The trade show takes place on a Sunday and a Monday: plan teams accordingly and schedule client meetings before opening.
- If your offer targets institutional catering, prepare arguments specific to that audience: the trade show explicitly targets it, and the 2025 edition devoted a competition to it.
- For a national brand, check the presence of its regional distributor or installer: in 2023, several equipment brands were listed on the same stand, with a regional equipment supplier.
For decision-making visitors
- Request your badge online as soon as registration opens, as entry is reserved for professionals.
- Come with a specific project, equipment renewal, fit-out or adding regional suppliers to your approved list, and identify in advance the stands to see: the trade show lasts only two days.
- If the 2027 programme repeats the 2025 apprentice and young cook competitions, follow them to spot future team members.
- Professional organisations and chambers of commerce, trades and agriculture were among the exhibitors in 2023: if they return, take the opportunity to ask about training, regulation or support.
CSR policy & initiatives
Neither the trade show's website nor Alliance Expo publishes a formal CSR policy, carbon footprint assessment or ISO 20121 certification: the Rest'Hôtel website has no Commitments or Sustainable development section, and the organiser's website does not present one either.
The trade show's content nonetheless touches on these topics. Short supply chains form an exhibitor category in their own right, and the programme of the 2023 edition highlighted local products, with the stand of the Chambre d'agriculture d'Indre-et-Loire and a collective area for the regional brand "Produit en Région © du Centre", run by Dev'Up, the region's economic development agency. The same year, the institutional-catering chefs' competition asked candidates to make use of the food waste from their preparations. These are programme themes, not a commitment by the organiser.
The venue, for its part, provides a documented approach. SPL Tours Événements, which operates the Parc des Expositions and the Palais des Congrès, has been ISO 20121 certified since 2019 and a société à mission (purpose-driven company) since 2021. It highlights an on-site recycling centre with ten-stream waste sorting, more than 1,700 LEDs installed across its two sites, a carbon footprint assessment and a partnership with the Fil Bleu network to strengthen public transport during events. The operator states that it rolls out these actions across all its events; neither the trade show nor its organiser communicates on their application to Rest'Hôtel.

Trajectory analysis
Alliance Expo launched the trade show in 2017 as Val de Loire Proexpo, with a wager, according to L'Hôtellerie Restauration: to attract professionals and exhibitors to a regional trade show for the food trades. For the organiser, the success of that first edition was "proof that Tours was missing a real professional trade show". The second edition, in 2019, renamed it Rest'Hôtel et Métiers de Bouche and added an area devoted to the hotel trade; a meeting every two years was then announced. The third edition, announced for spring 2021, finally took place in March 2023, and the biennial rhythm resumed afterwards with 2025 then 2027.
The published figures do not allow growth to be measured precisely. The 2017 and 2019 results are of the same order, between 120 and 140 exhibitors and around 2,800 visitors or establishments, but they are not expressed in the same unit. For 2023, the trade show journal announced more than 170 exhibitors before opening, and the organiser's 2025 registration pack gives, after the fact, more than 180 exhibitors, 9,000 m² and more than 3,100 visiting establishments: a change of scale compared with 2019, unaudited. Archived versions of the website show that its counters went, between May and November 2024, from 120 exhibitors, 6,000 m² and 2,800 visiting establishments to 180 exhibitors, 9,000 m² and 3,000 visiting establishments, values close to those that this pack attributes to 2023. No results are published for 2025.
For a supplier, the trade show's appeal lies less in its size than in its regional density: more than 16,000 establishments in the targeted area according to the organiser, professional organisations listed as exhibitors in 2023 and competitions that anchor the event in local industries, from butchery to institutional catering.
No edition beyond 2027 has been announced.
